Why does this happen?
✔ Thigh meat is naturally darker – Cooked chicken thighs can have a greyish-brown hue, which is normal due to their higher myoglobin content compared to white meat.
✔ Ingredients affect color – Herbs, spices, and sauces in the dish can influence the final appearance of the meat.
✔ Gluten-free breadcrumbs are lighter – We use rice flour-based breadcrumbs for our Chicken Katsu, which don’t brown as much as wheat-based coatings.
✔ No deep frying or added sugars – We don’t deep fry or use excess oil & sugars, so the chicken doesn’t caramelize or develop a darker crust.
